Super Bowl Sunday: Navigating a Snacking Holiday with Success

Super Bowl Sunday has always been one of my favorite holidays.  Am I a huge football fan?  Nope!  But, I do love snacks, and this holiday has the best – chicken wings, fried food, chips & dip, beer, wine, sweets, and general deliciousness.  This is the first Super Bowl since surgery, so I knew it would be a different experience, but after making it through Thanksgiving, Christmas, and New Years, I was confident.

Initially, I thought it would only be my husband and I, but my sister and her boyfriend joined the party!  They both know about my surgery, so thankfully there was no awkwardness when I did separate snacks.  For everyone else, I made “healthy” loaded smashed potatoes – baked red skin potatoes with reduced fat cheese, turkey bacon, scallions, and greek yogurt ranch dressing.  I used the same toppings for myself over some shredded rotisserie chicken, which was delicious.

For dessert, we all went light, with a massive fruit tray.  (Of course, only 4 oz for me!)

My sister also brought some of those addictive sugar cookies, which I took no part of, but they looked delicious.

And finally, what is Super Bowl without some wings?  I used my T-Fal Actifry and avoided the use of any oil!  It is a much healthier way to do wings.  I paired them with the greek yogurt ranch dressing/dip that I used for the potato skins, and it was a perfect match.  I will put up my recipe for each of these later this week – it couldn’t be easier.
