I hope you all had a fabulous Valentine’s Day weekend! I took both Friday and Monday off to spend with B, and instead of going away we decided to have a nice relaxing staycation home. We saw two movies, went shopping, had several nice meals, and spent tons of time just laughing and being together. (I couldn’t ask for a better Valentine’s Day gift!)
We even managed to fit in a couples date to our staycation! Sunday afternoon, we had B’s best man from the wedding over with his lovely wife for a little post-Valentine’s Day get-together. We actually hadn’t seen them since August, as we all have crazy schedules, so I knew Sunday would be filled with lots of catching up! Accordingly, I strategically planned our meal to be a relaxed, stress-free affair, starting with my no-hassle Avocado Hummus.
Hummus is the perfect appetizer for entertaining because it can be made ahead of time, looks impressive but is very affordable to make, and keeps well in the refrigerator! It is also a great option when you have guests that are focusing on eating healthy, since you can pair it with veggies for a nice low-carb snack. Finally, it is endlessly customizable to fit your tastes or whatever you happen to have on hand. And, let’s face it, most of the ingredients are in our pantries all the time, so it is a fantastic last minute snack idea. This recipe came about because we had a perfectly ripe avocado and a bunch of cilantro, which were just begging to be used – hence, my Avocado Hummus Recipe was born. I hope you enjoy!
- 2 cans chickpeas (drained and rinsed)
- 1 clove garlic
- 1/4 cup olive oil, plus drizzle for garnish
- Juice of 1 lemon
- 2 tablespoons sesame seeds
- 1/4 cup hot water
- 2 tablespoons cilantro
- 1 ripe avocado
- Salt to taste (start with 1/2 teaspoon)
In a blender, combine the garlic, hot water, and sesame seeds. Add in the rest of the ingredients and blend. I used my Vitamix on the pulse function until it was the texture I wanted – mostly smooth, but still a bit chunky. Transfer to your serving bowl and garnish with a drizzle of olive oil. Serve with vegetables, pita chips, or whatever you desire!
